  1. I have a of favorite kale recipe. It can be an entree or a side dish

    White Beans and Greens with Spiced Olive Oil 4 servings
    1 T olive oil
    2 cups thinly sliced onions
    1/2 cup sliced red bell pepper
    3 cloves garlic, minced
    1/4 tsp dried crushed red pepper
    2 15-oz. cans cannellini beans, drained
    2 T chopped fresh oregano or 2 tsp dried
    8 cups trimmed coarsely chopped greens (kale or swiss chard)
    14 cup thin Parmesan cheese curls ( about 2 oz.)

    Heat oil in heavy large saucepan over medium heat. Add onions and bell pepper; saute until onions are golden, about 7 min. Add garlic and crushed red pepper, stir 1 minute. Add cannellini beans, 1/2 cup water (broth or white wine could be used here) and oregano; simmer over low heat until mixture thickens, about 10 minutes.
    Meanwhile cook greens in a large pot of boiling salted water until just tender, about 5 minutes. Drain greens well.
    Add greens to bean mixture. Season with salt and pepper. Divide among 4 bowls, sprinkle with cheese curls.
